Pineapple Mojito

This recipe is a delicious variation of the traditional mojito.

  • 2 ounces dark rum
  • 1 pineapple juice
  • 2 slices pineapple
  • 7 leaves peppermint
  • 5 limes, only the wedges
  • 2 teaspoons sugar
  • ice cubes

  • With a muddler, crush the mint, pineapple pieces, and sugar at the bottom of a shaker.
  • Add the ice and rum; shake vigorously to mix the ingredients well.
  • Strain into a tall glass with ice and top up with pineapple juice.
  • Garnish with pieces of pineapple and mint leaves.
