Cut the watermelon into cubes, removing the seeds.
Place the cubes on a tray lined with aluminum foil and cover with plastic wrap, making sure the pieces don't stick together. Put in the freezer for several hours (it can be a day ahead) so the cubes reach the desired firmness.
Place the cubes in a blender, add the ounces of vodka, and blend at medium speed. Add the lemon zest and sprinkle with Tajín chili powder.
Serve in short glasses and garnish with mint.
