Baguette Dough

  • 250 grams flour
  • 7 grams dry yeast
  • 7 grams salt
  • 200 milliliters water

  • For the dough: mix the flour and yeast in the mixer, gradually add the water, and then the salt to avoid darkening. Knead at medium speed, checking the consistency of the dough, which should be compact and firm.
  • Spread a little flour on a baking sheet, take the dough out of the mixer, place it on the baking sheet, and let it rest for 20 minutes, or until it doubles in size.
  • Spread flour on the table and then place the dough. Remove as much gas from it as possible.
  • Divide the dough in two, shape it into a rectangle, and roll it up gradually, pressing with your fingers to seal, continuing until fully rolled.
  • Stretch it gradually until you obtain a strip of 30 cm and place it on a baking sheet with a little flour.
  • Using a knife, make shallow diagonal cuts and let it rest for 40 minutes, or until it doubles in size.
  • Preheat the oven to 220° C.
  • Mix a little salt with water and splash the baguette before baking; this will help form the crust. Bake in the oven for 25 minutes.
