Blueberry and Orange Scones

  • 2 1/4 cups Gamesa® pancake mix
  • 1/4 cups sugar
  • 1 tablespoon orange zest
  • 1/2 cups butter, cut into pieces
  • 1 cup cranberries
  • 1/2 cups cow's milk
  • 1 tablespoon cow's milk, for brushing the scones before baking
  • 1 teaspoon sugar, for sprinkling at the end

  • Preheat the oven to 425 Fahrenheit or 220 degrees Celsius.
  • Mix the pancake flour, sugar, and orange zest in a bowl. Add the cold butter cut into cubes and, using two knives or your hands, form a dough. Add the blueberries and gradually add the milk, stirring with a fork until everything is moist.
  • Place the previous mixture on a floured surface and knead for 10-12 times until it forms a dough that does not crumble. (Note: if you knead too much, the scones will be very hard).
  • Form a ball with the dough and flatten it to a thickness of 1.5 inches. Cut it into 8 slices as if it were a pizza. Transfer the slices to the previously greased baking sheet, leaving space between them as they will increase in size.
  • Brush the top with milk and sprinkle with sugar. Bake for 12-15 minutes or until golden brown.
