  • In a bowl, combine the dry ingredients: flour, sugar, salt, baking soda, and yeast. Mix well.
  • Then add the lard and butter, and incorporate. Next, add the eggs and vanilla.
  • Knead until the dough pulls away from your hands, cover it with a cloth to rest and prevent it from drying out for at least 45 minutes. Meanwhile, prepare the filling.
  • In a skillet, add the butter and sugar; once well combined, add the sweetened condensed milk and, using a whisk, incorporate some air. Then add the coconut, let it sit for a couple of minutes, remove from heat, and set aside.
  • Once the dough is ready, make balls according to your desired size, flatten them with a rolling pin, and once flattened, flip them over and add the coconut filling. Cover with another tortilla and seal using your fingertips or a fork, then add another portion of coconut filling, and it's ready to bake.
  • Preheat the oven to 130ºC, place the pieces on baking trays, and bake for 30 minutes on the top rack and a couple of minutes on the bottom rack of the oven, and it's ready to eat.
