In a bowl, combine the dry ingredients: flour, sugar, salt, baking soda, and yeast. Mix well.
Then add the lard and butter, and incorporate. Next, add the eggs and vanilla.
Knead until the dough pulls away from your hands, cover it with a cloth to rest and prevent it from drying out for at least 45 minutes. Meanwhile, prepare the filling.
In a skillet, add the butter and sugar; once well combined, add the sweetened condensed milk and, using a whisk, incorporate some air. Then add the coconut, let it sit for a couple of minutes, remove from heat, and set aside.
Once the dough is ready, make balls according to your desired size, flatten them with a rolling pin, and once flattened, flip them over and add the coconut filling. Cover with another tortilla and seal using your fingertips or a fork, then add another portion of coconut filling, and it's ready to bake.
Preheat the oven to 130ºC, place the pieces on baking trays, and bake for 30 minutes on the top rack and a couple of minutes on the bottom rack of the oven, and it's ready to eat.
