Preheat the oven to 180°C. In a bowl, mix the sugar, butter, milk, mint, and 2 tablespoons of coffee until you achieve a smooth paste. This cream goes on top of the bread.
Mix the flour, baking powder, coconut, molasses, 4 tablespoons of coffee, and melted butter. The flour should be sifted to avoid lumps.
Grease a glass baking dish with butter and dust it with flour.
Well mixed, the flour is placed in the baking dish, pressing it down well.
Bake for 20 minutes.
Unmold and add the mint cream, spreading it well.
Let cool and cut into squares.
