Dead Bread Ring

Dead bread is a bread with history and tradition, as it is specifically made in Mexico to celebrate the Day of the Dead.   • 4 cups flour, 1 kg, for the dough
  • 2 tablespoons REXAL® baking powder, 30 g, for the dough
  • 1 teaspoon salt, 7 g, for the dough
  • 2/3 cups milk, 160 ml, for the dough

  • 3/4 cups sugar, 180 g, for the dough
  • 1 cup butter, 200 g, soft, for the dough
  • 1 teaspoon orange zest, 7 g, for the dough
  • 1 teaspoon orange blossom essence, 7 ml, for the dough
  • 1 teaspoon vanilla essence, 7 ml, for the dough
  • butter, melted, for decorating the bread
  • granulated sugar, for decorating the bread
  • marigold petals, edible

  • For the dough: Mix the flour with Rexal® Baking Powder and salt, then add the milk and egg and work the mixture until everything is perfectly integrated. Add the sugar in 3 parts, waiting for it to be fully integrated each time, then add the butter in 3 parts, waiting for it to be fully integrated each time. Finally, add the orange zest, D'gari® vanilla essence, and orange blossom essence. You should obtain a very elastic and moist dough.
  • Let the dough rest in the refrigerator for 30 minutes.
  • Cut pieces of dough weighing approximately 80 grams and set aside a bit of dough to form the bones. Roll the cut dough into balls, and for the piece of dough set aside for the bones, add more flour and work it until it has a firm texture, then shape strips and figures with your fingers. Next, attach the bones to each of the breads; you can do this with a bit of egg if you deem it necessary.
  • Bake at 180 °C for 40 minutes.
  • Remove the dead bread ring from the mold and while it is still hot, brush with melted butter and sprinkle generously with sugar.
  • Serve the ring on a large platter to share and decorate with cempasúchil flower petals. Accompany the bread with cajeta or cream according to your preference.
