Fluffy King's Cake

  • 250 grams flour
  • 60 grams sugar
  • 5 grams salt
  • 5 grams yeast
  • 75 grams butter
  • 2 eggs
  • 75 milliliters cow's milk
  • 1 orange
  • 1 lime
  • 50 grams vegetable shortening
  • 50 grams sugar
  • 50 grams flour
  • 20 grams fruit paste
  • 20 grams guava paste
  • 20 grams cherry paste
  • 30 grams maraschino cherries

  • Preheat the oven to 45°C.
  • Combine in a mixing bowl the flour, sugar, salt, and eggs. Beat until the dough pulls away from the sides.
  • Lower the speed and add the yeast along with the milk and butter, beat enough until you have a homogeneous dough.
  • Grease the inside of a Ziploc® bag with a bit of oil and place the dough in the bag. Let it rest for 30 minutes or until it doubles in volume.
  • Remove the dough from the bag and add the orange and lemon zest. Shape the dough into a ring, brush the surface with a beaten egg. Cut the candied fruits into thin sticks and place them on the cake alternately, leaving enough space to put cherries and the sugar crust in the middle.
  • For the sugar crust; Cream the vegetable shortening with the sugar inside a Ziploc® bag, add the flour, and knead until you have a homogeneous paste.
  • Place the sugar crust on top of the cake. Put the cake on a baking tray, place a tray with a bit of water inside the oven, and put the cake in. Let it ferment for about 10 minutes at 45°C. This is to ensure it doubles in volume.
  • Increase the oven temperature to 180°C, remove the water tray, and bake the cake for 45 minutes or until fully cooked.
  • Remove from the oven, let cool completely, and serve.
