Garlic Bacon Bread

This garlic bacon bread is soft as velvet, crumbles when bitten, and is delicious with an extra special touch of garlic and bacon. You can enjoy it alongside any meat cut, a classic Christmas loin or turkey, as well as a charcuterie and cheese board. It has a process that requires patience, like all homemade bread, but the result is worth it.

  • olive oil
  • 10 cloves garlic, finely sliced
  • 2 cups bacon, sliced
  • 2 1/2 cups wheat flour, strong flour, preferably, 500 g
  • 1 envelope dry yeast, 11 g
  • 1 1/2 tablespoons sugar, 25 g
  • 1/2 cups milk, warm, 125 ml
  • 5 eggs
  • 2 cups butter, soft, 250 g
  • 1 cup Manchego cheese, in medium cubes
  • 1 tablespoon salt, 15 g
  • egg wash
  • coarse salt
  • Parmesan cheese, grated, for decoration

  • Heat a skillet over medium heat, pour a little olive oil, and sauté the garlic with the bacon for 5 minutes, until the bacon is slightly browned. Set aside.
  • Mix in a bowl, whether by hand or with a mixer, the wheat flour with the yeast and sugar, then add the milk, the egg, and work the dough until the ingredients are fully integrated.
  • Add the butter gradually and continue working until it is well integrated into the dough; it should have a very soft and elastic texture. Finally, incorporate the salt, garlic, and the bacon you browned, until they are perfectly integrated into the dough. Let the dough rest and ferment in the refrigerator overnight.
  • Once it has fermented and cooled, divide the dough into 60-gram balls and roll them. Make a hole, fill with a cube of Manchego cheese, and close it with your hands.
  • Place the balls in a baking dish or oven-safe pan previously greased with olive oil; they should be touching each other until the dish is filled. Brush with egg wash and let rest to ferment for 30 minutes or until they double in size.
  • Once the time has passed and the garlic bacon breads have doubled in size, brush again, sprinkle a little sea salt and parmesan cheese.
  • Bake between 165 and 170 °C for 30 minutes. Remove from the oven and enjoy.
