This recipe arose from the lack of carrots when trying to prepare carrot muffins and turned out to be much tastier than the original. The flaxseed adds nutrients like Omega to this delicious and nutritious dessert.
Beat the condensed milk with the two eggs until well combined.
Add the flour, baking powder, and sifted cinnamon to the previous egg and milk mixture.
Incorporate the oil while continuing to beat.
Add the walnuts and ground flaxseed.
Finally, incorporate the grated or chopped apple.
Place liners, one in each muffin mold, and then add a bit of the mixture to each, almost to the edge of each liner. Finally, sprinkle sugar-free granola or candied sesame on top of each mold.
Bake for about 30 minutes, check for doneness; if needed, leave for an additional 10 minutes, until a toothpick inserted comes out clean.
Remove from the oven, let cool slightly, and unmold.
