Healthy Apple Muffins

This recipe arose from the lack of carrots when wanting to prepare carrot muffins and it was much richer than the original. Flaxseed adds omegas-like nutrients to this delicious and nutritious dessert.

  • 1 can light condensed milk
  • 2 eggs
  • 50 grams wheat flour, preferably integral
  • 1 tablespoon baking powder
  • 1 tablespoon cinnamon powder
  • 1/4 cups vegetable oil, soy or sunflower
  • 100 grams walnuts, ground
  • 50 grams flaxseed, ground
  • 2 cups apple, peeled, grated, or finely chopped
  • 2 tablespoons granola
  • 2 tablespoons sesame seeds, scuffed

  • Preheat the oven to 180ºC.
  • Beat the condensed milk with the two eggs until well integrated.
  • Add the sifted flour, baking powder and cinnamon to the previous mixture of egg and milk.
  • Add the oil while continuing to beat.
  • Add the walnut and ground flaxseed.
  • Finally, add the grated or chopped apple.
  • Place cups, one inside each pancake pan, and then add a little of the batter to each, almost to the edge of each pan. At the end, sprinkle unsweetened granola or praline sesame over each mold.
  • Bake for about 30 minutes, check the doneness, if it is necessary to leave 10 more minutes, until when you insert a toothpick, it comes out clean.
  • Remove from the oven, let it cool slightly and unmold.
