Blueberry Mantecadas

  • 6 tablespoons unsalted butter, at room temperature
  • 3 cups flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 1/4 cups sugar
  • 1 egg
  • 2 eggs
  • 1 tablespoon vanilla essence
  • 1 cup cow's milk
  • 2 cups blueberries, (blueberry)

  • Preheat the oven to 180 degrees Celsius. Grease a baking dish for 12 mantecadas with a bit of butter and vegetable spray.
  • In a deep bowl, sift the flour, baking powder, and salt, and mix well.
  • In an electric mixer, beat the butter and sugar until fluffy. Add the egg, egg yolks, and vanilla, and continue beating.
  • Slowly beating, gradually add the flour and milk, alternating between the two.
  • Finally, add the blueberries and mix with a spoon manually (to prevent them from breaking).
  • Pour the mixture into the baking dish, filling each space to 3/4 full, and sprinkle with a bit of sugar.
  • Bake for 30 minutes or until they are lightly golden. Remove from the oven and allow to cool for at least 10 minutes before serving.
