Cheese-Filled Churros

  • 1 cup water, for the dough
  • 1 teaspoon salt, for the dough
  • 1 tablespoon sugar, for the dough
  • 1 cup butter, for the dough
  • 150 grams flour, for the dough
  • 4 San Juan® eggs, for the dough
  • 1/2 cups guava, seedless, for the sweet
  • 1 cup piloncillo, granulated, for the sweet
  • 1/2 cups water, for the sweet
  • 1 stick cinnamon, for the sweet
  • 1 star anise pod, for the sweet
  • 2 cups cream cheese, at room temperature for the filling
  • 1/4 cups icing sugar, for the filling

  • In a pot, heat the water with salt, sugar, and butter until melted, stirring to combine; when boiling, add the flour and whisk vigorously with a whisk until perfectly incorporated for 5 minutes. Remove from heat, let cool, and transfer to a mixing bowl. Start mixing and add the pieces of Huevo San Juan® one by one, without stopping mixing. Set aside.
  • Make a piping bag with a plastic bottle: cut a star-shaped opening in the lid and cut the bottle from the first quarter. Use the piping bag you made with a plastic bag to fill it with churro dough.
  • Heat plenty of oil and cook the churros; cut them to the desired size with the help of scissors. Fry each churro for approximately 5 minutes, until fully cooked and you achieve the desired color. While still hot, sprinkle with the mixed sugar and cinnamon.
  • For the guava syrup, cook the guavas with water, piloncillo, cinnamon, and star anise in a pot; boil for 10 minutes until it becomes a light syrup.
  • Beat the cream cheese with the powdered sugar until you have a smooth mixture. Place it in a resealable bag, cut the tip of the bag, and set aside.
  • Cut one end of the churros and fill them using the bag or piping bag, serve with guava syrup. You can decorate the plate with guava and mint. It's time to enjoy!
