  • For the poolish: combine the flour, sugar, yeast, and warm milk in a bowl. Let it rest for 20 minutes.
  • Mix the flour, eggs, egg yolks, orange blossom essence, orange zest, and sugar until a homogeneous dough is obtained. Gradually add the butter until a smooth and elastic dough is achieved. Place the dough in a previously greased bowl, let it rest at room temperature for 1 hour or until it doubles in size.
  • Punch down the dough and divide it into portions of 80 grams. Set aside a bit of dough and divide it into portions of 7 grams for the bones and other portions of 3 grams for the ball on top. Shape the bones and the skull.
  • Place the small balls on a previously greased baking sheet, decorate with the bone shapes and a ball in the center, and bake at 180 °C for 20 minutes. Let the Day of the Dead bread cool and set aside.
  • Brush the Day of the Dead bread with a bit of melted butter and sprinkle with sugar.
  • Serve the Day of the Dead bread with a cup of hot chocolate.
