Filled Berliners

Berliner doughnuts are filled buns generally with jams or sweet creams; they are a dessert from German pastry. With this homemade sweet bread recipe, you will delight everyone because they are very easy to make and turn out spectacular.

  • 4 cups flour
  • 3/4 cups sugar
  • 11 grams dry yeast
  • 1 egg
  • 1 cup milk
  • 1/2 teaspoons salt
  • 1/4 cups butter, at room temperature (45 grams)
  • 1 tablespoon orange zest
  • 2 cups vegetable oil
  • pastry cream, for filling
  • hazelnut chocolate cream, for filling
  • icing sugar, for decoration

  • Beat the flour, sugar, and yeast together, mixing until integrated. Add the egg and milk, and knead until a homogeneous dough is achieved.
  • Add the butter, orange zest, and knead until a smooth dough is obtained. Let it rest until it doubles in size in a bowl covered with non-stick plastic wrap.
  • On a floured table or surface, roll out the dough to about 5 mm thick and use a round cutter to cut out circles; place them on a baking sheet and let them rest for 15 minutes.
  • In a saucepan, heat the oil over medium heat and fry the Berliner doughnuts for about 4 minutes on each side; place on paper towels and cool.
  • Using a pastry bag and tip, fill the Berliner doughnuts with pastry cream, hazelnut cream, or your preferred filling, and decorate with powdered sugar.
