Beat the flour, sugar, and yeast together, mixing until integrated. Add the egg and milk, and knead until a homogeneous dough is achieved.
Add the butter, orange zest, and knead until a smooth dough is obtained. Let it rest until it doubles in size in a bowl covered with non-stick plastic wrap.
On a floured table or surface, roll out the dough to about 5 mm thick and use a round cutter to cut out circles; place them on a baking sheet and let them rest for 15 minutes.
In a saucepan, heat the oil over medium heat and fry the Berliner doughnuts for about 4 minutes on each side; place on paper towels and cool.
