Fluffy Homemade Mantecadas

You no longer need to go to the corner bakery; now you can prepare these amazing homemade mantecadas. You won’t need a mixer to make them, and they are so economical and yield so much that it becomes the ideal recipe for dinner.

  • 3 eggs
  • 1 cup sugar
  • 1 cup vegetable oil
  • 1 tablespoon orange zest
  • 1/4 cups orange juice
  • 1/4 cups cow's milk
  • 1 1/2 cups flour
  • 4 tablespoons cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • yellow food coloring

  • Preheat the oven to 170°C.
  • Using a whisk, beat the eggs with the sugar until combined.
  • Gradually add the oil, orange zest, orange juice, milk, and whisk until combined.
  • Using a sieve, add the flour, cornstarch, baking soda, baking powder, and yellow food coloring, and whisk for 5 more minutes.
  • Pour into a cupcake mold with liners, filling up to ¾ of its capacity and bake for 20 minutes. Cool and serve.
