Homemade King Cake

  • 1 teaspoon dry yeast, 5 grams
  • 1 tablespoon sugar
  • 2 tablespoons water, warm
  • 2 cups flour, 250 grams
  • 1/4 cups sugar, 60 grams
  • 2 eggs
  • 1/3 cups cow's milk, 75 ml
  • 1 orange, just the zest
  • 1/3 cups butter, (75 g at room temperature)
  • 1/2 cups butter, 100 g for the crust
  • 1/2 cups sugar, 100 g
  • 1/2 cups flour
  • 1 egg, for glazing
  • 3 tablespoons sugar
  • 150 grams fruit paste, different flavors and colors, cut into sticks
  • 10 cherries

  • Preheat the oven to 180° C.
  • In a small bowl, mix the yeast with the sugar and warm water. Let it rest for 10 minutes until it froths. Set aside.
  • In the mixer, beat the flour with the sugar, the prepared yeast, the eggs, the milk, and the zest. Mix well and then add the butter. Beat for about 10 minutes until you obtain a homogeneous and elastic dough.
  • Place the dough in a lightly greased bowl and cover with non-stick paper. Let it ferment for about 1 hour or until it doubles in size.
  • For the crust, mix the butter with the sugar and flour until a dough forms. Wrap with non-stick plastic and freeze for 10 to 15 minutes.
  • Punch down the ring dough and knead it into a strip. Shape it into a ring and smooth the surface with your hands to make it even.
  • Insert 6 plastic figurines into the ring and brush the surface with egg, place strips of the crust, and sprinkle with sugar. Interleave the ate and cherries.
  • Place the formed ring on a baking tray and let it ferment for an additional 20 to 30 minutes or until it doubles in size.
  • Bake for 25 minutes, cool, and enjoy.
