Peach Upside-Down Cupcakes

  • 1 cup butter, melted
  • 1/2 cups Domino® raw sugar
  • 3 peaches, fresh, sliced
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoons salt
  • 2/3 cups Domino® raw sugar
  • 1 egg
  • 1 teaspoon vanilla essence
  • 1/2 cups whipping cream

  • Mix the melted butter with the Domino® Muscovado Sugar and place a layer of the mixture at the bottom of the molds, add peach slices, and set aside.
  • Mix the flour, baking powder, baking soda, salt, and Domino® Muscovado Sugar; add the egg, vanilla, and heavy cream, and incorporate perfectly.
  • Fill each mold with a tablespoon of the previous mixture up to ¾ of its capacity for each cupcake.
  • Bake at 180 °C for 20 to 25 minutes. Cool, unmold, and enjoy.
