Sugar Gorditas

Sugar gorditas, super delicious! It’s a dessert that my mom always made for us at home, perfect for cooking with the little ones in the house.

  • 1 cup flour
  • 1 cup pancake mix
  • 1 cup sugar
  • 2 eggs
  • 2 sticks butter
  • 1 dash cow's milk, warm
  • 1 teaspoon vanilla essence, optional
  • 1 piloncillo, grated piloncillo or it can be substituted with 1 cup of sugar

  • In a large bowl, mix the two flours, sugar, and vanilla. Incorporate the butter and mix until you have a sandy mixture.
  • Add the egg and mix. Gradually add the milk, working the dough for 10 minutes until you have a uniform dough that is easy to detach from the bowl. Cover the dough with plastic wrap and let it rest for 15 minutes.
  • Portion the dough, shape it into small balls. Using a rolling pin, flatten the balls to form a circle with a thickness of approximately 3 - 4 millimeters.
  • Preheat a griddle and cook the gorditas on both sides.
