In a large bowl, mix the two flours, sugar, and vanilla. Incorporate the butter and mix until you have a sandy mixture.
Add the egg and mix. Gradually add the milk, working the dough for 10 minutes until you have a uniform dough that is easy to detach from the bowl. Cover the dough with plastic wrap and let it rest for 15 minutes.
Portion the dough, shape it into small balls. Using a rolling pin, flatten the balls to form a circle with a thickness of approximately 3 - 4 millimeters.
Preheat a griddle and cook the gorditas on both sides.
