6 bolillo rolls
6 tablespoons olive oil
1 onion
1 1/2 cups button mushrooms
3 tomatoes

12 slices Manchego cheese
150 grams deli ham, in thin slices

Clean the mushrooms and slice them thin.
The bolillos are opened, a little crumb is removed and they are spread with 3 tablespoons of oil.
The onion is thinly sliced and the remaining oil is added.
The mushrooms are added and they are allowed to boil for two minutes.
On the open loaves, place the tomato slices, season with salt and pepper, oregano and top with onion and mushrooms.
To finish, place a slice of cheese on each bread and on top of the ham chopped finely.
They are put in the oven, already hot at 175ºC, for 20 or 25 minutes or until the cheese is hot and melted.
Serve hot.
