Add 1 packet of baking yeast along with 2 tbsp of warm water. Mix and let it rest for 10 minutes.
Add 900 g of flour, 75 g of sugar, 1 tbsp of salt, 2 egg yolks, 1 egg, and 400 ml of warm milk.
When forming the dough, add 250 g of lard.
Form the dough by integrating everything, kneading for 10 minutes. Let it rise until it doubles in size.
For the filling, place 2 chopped onions, 1 chopped garlic clove in a pan and sauté them in oil. Add 250 g of diced potatoes, let the potatoes cook for about 30 minutes. Add 400 g of minced meat, 2 sprigs of dill, salt, and pepper, and cook for another 20 minutes. Let the filling cool before using it.
Take portions and roll them out with a rolling pin, in a round shape. Add a little filling in the center of each one.
Form the crimps and the piroshki is ready.
Another way to assemble the piroshki is as follows: cover the filling with the dough and pull the ends, then adjust the filling to distribute it along and flatten the seam so that it’s flat. Finally, bring the ends together and seal.
Bake until they are golden brown on the outside.
