In a container, add the hard bolillo (the harder, the better; just make sure it is not decomposing), cut it into medium pieces, add the milk, and let it rest for about 15 minutes. Check that everything is fully hydrated by the milk, resulting in a thick mixture. If necessary, add water (only as needed for the mixture). Add the eggs, the melted butter (reserving some to grease the baking mold).
Incorporate the sugar, cinnamon, baking powder, and mix very well by hand, breaking the bread completely until a very thick paste is formed.
Grease and flour the baking mold, preheat the oven to 200ºC. Bake for 30 minutes or until a toothpick inserted comes out clean.
