Wash the potatoes, peel them, and boil in water until tender. Drain and mash the potatoes with a good amount of butter and salt.
Sift the flour gradually into the potatoes until a smooth dough forms. The exact amount of flour depends on the moisture content of the potatoes, so you have to judge it yourself; just keep adding flour until the dough is smooth and not sticky.
Roll out the dough on a floured surface into a square, 1/2 to 1 centimeter thick. Use extra flour to dust while rolling and cutting if necessary. Shape the edges and cut into squares. It will look rustic, just as we want it.
Place the squares in a large skillet over high heat; we do not need to add oil or butter. Lower the heat after a few minutes and cook until the bread starts to brown. Spread a little butter on the bread once cooked.
