Pour 12 grams of fresh or active yeast into 120 milliliters of warm milk.
Add to a mixer with a dough hook: 500 grams of flour, 100 grams of sugar, 4 grams of salt, and 4 eggs. Incorporate the vanilla or orange essence and the yeast and milk mixture.
Gradually incorporate 200 grams of butter and the zest of 1 orange and 1 lemon.
Check that the dough easily pulls away, and it will be ready.
Grease a container with vegetable oil, place the dough inside, and cover with a cloth. Put the dough in a closed place with a container of hot water next to it. Let it double in size, approximately after 30 minutes.
Add 4 drops of yellow food coloring to a container with refined sugar.
For the sugar topping: 50 grams of butter at room temperature, 50 grams of sugar, 50 grams of flour, and 10 grams of egg. Mix until you obtain a paste and place it in a pastry bag.
Knead the dough with your fingers until it has doubled in size, shape it into a ring with your hands, and insert the plastic figurines.
Decorate the ring with sugar paste, pineapple in triangles, and cherries in syrup. Brush with a beaten egg. Sprinkle the strips of paste with yellow sugar.
Bake at 180°C for about 20 minutes or until slightly golden.
