  • 3 1/4 cups flour

  • 2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 3 cups sugar
  • 1 cup oil
  • 4 eggs , blended
  • 1/3 cups water
  • 2 cups zucchini , grated
  • 1 cup nut , chopped

  • Preheat the oven to 180 degrees.
  • In a large bowl, mix the flour, salt, nutmeg, baking soda, cinnamon, and sugar.
  • In another bowl, mix the oil, eggs, water, and zucchini.
  • Add the wet ingredients (oil, etc.) to the dry ingredients mixture (flour, etc.).
  • Add the nuts and stir a little until combined.
  • Pour the mixture into two elongated loaf pans that have been greased and floured.
  • Place in the oven for 1 hour.
