All-bran Blueberry Muffins

These muffins are very healthy and can be made with other fruits like pears or raisins. They are a great source of fiber which will help your digestion.

  • 1 1/2 cups flour
  • 1 cup cereal All Bran
  • 2 tablespoons Splenda
  • 1 1/4 teaspoons baking soda
  • 1/4 teaspoons salt
  • 1 1/4 cups skim milk
  • 2 eggs, a little beaten
  • 3 tablespoons vegetable oil
  • 1 cup dried cranberries, (can be replaced with chopped pears)
  • 1 1/2 teaspoons vanilla essence

  • Preheat the oven to 350 degrees Fahrenheit. Place muffin cups on a muffin tray.
  • Mix the flour, all-bran, splenda, baking soda, and salt in a large bowl.
  • Mix the milk, eggs, oil, blueberries, and vanilla in another bowl.
  • Make a well in the center of the bowl of dry ingredients. Add the egg and milk mixture and stir to combine. Pour the mixture into the muffin tray.
  • Bake for 20 minutes and let cool before serving.
