Pass the tortillas through hot oil, but do not let them brown. Place them on an absorbent paper towel. Set aside.
Meanwhile, roast the tomatoes, garlic, and ½ onion in slices. Once toasted, blend them with the FAGE Greek Yogurt, and season with coarse salt and pepper.
In a skillet with oil, fry the rest of the finely chopped onion, bell peppers, corn, and chicken. Incorporate the tomato sauce.
In a greased baking dish, place a layer of tortilla, then add a layer of the chicken mixture. Repeat this process 3 times. Cover with a layer of manchego cheese and bake at 180°C for 10 minutes or until the cheese is melted and begins to brown.
