Banana Stuffed French Toast

This French toast is filled with a mixture of banana and ricotta cheese and served with whipped cream and maple syrup.

  • slices wholemeal bread, thick
  • 1 egg
  • 1/4 cups cow's milk
  • cinnamon, or yellow pepper
  • 1/4 cups sugar
  • 4 bananas, ripe
  • 1/4 cups ricotta cheese
  • 1/4 cups whipped cream
  • maple syrup
  • 4 tablespoons unsalted butter
  • 1/2 tablespoons liquid vanilla

  • In a deep bowl, beat the egg with the milk.
  • In another deep bowl, mix the cinnamon and sugar.
  • Prepare a large skillet and melt the butter over low heat.
  • Dip each piece of bread in the egg and then coat it in the cinnamon and sugar mixture, immediately transfer to the skillet with butter to cook. Cook each slice until lightly browned on each side.
  • Place the French toast on a plate with a paper towel while you cook the filling.
  • In a food processor, blend the banana with the ricotta cheese. Then add 4 tablespoons of the cinnamon and sugar mixture (you can add more to taste) and the vanilla, and mix well.
  • Take the slices of bread and place the banana filling on top of 2 of them. Place the other 2 slices of bread on top, forming a sandwich.
  • Return the sandwich to the skillet over medium heat and cook just to lightly warm the filling.
