Blueberry Almond Scones

Not only is the recipe super easy, but these are the most delicious scones I have ever tried in my life. Plus, the recipe is very quick, and there’s nothing better than homemade bread for a delicious breakfast or brunch.

  • 3 cups flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1 pinch salt
  • 1 egg
  • 1 stick unsalted butter , cut into pieces
  • 1 cup cranberries
  • 1/2 cups almonds, mashed toast
  • 2/3 cups whipping cream
  • 1 egg, mixed with 4 tablespoons of water

  • Preheat the oven to 180 degrees Celsius.
  • In a food processor with the dough blade (the only one that doesn’t cut), mix the dry ingredients: flour, sugar, baking powder, and salt.
  • In a separate bowl, mix the egg, the whipping cream, and the butter.
  • Add the liquid mixture to the dry mixture and process until a dough has formed.
  • Place flour on a surface, take the dough from the processor, add the blueberries, and knead by hand until no lumps of butter remain.
  • With your hands, shape the dough into a circle (like a pizza base) and cut into 8 triangles.
  • Take a baking sheet, spray it with vegetable oil, and place the triangles on it.
  • Brush each triangle with a bit of the egg mixed with water (this is to give the bread a nice color). And sprinkle crushed almonds and a little sugar on top.
  • Bake for 15 minutes and serve.
