Preheat a large skillet over medium heat for 2 minutes.
In a large bowl, sift together the flour, baking powder, salt, and cinnamon.
Make a well in the center and add the oil, water, milk, blueberries, maple syrup, and vanilla. Mix until the ingredients are combined (tip: the less you mix, the thicker and fluffier it will be).
Spray the skillet with a little cooking spray. Pour some of the mixture in circles one at a time and cook until bubbles form on the surface.
Flip the pancakes to the other side to cook and enjoy!
