Broken eggs

A delicious Spanish breakfast / meal where semi-cooked eggs are mixed with French fries and Serrano ham.

  • 6 eggs
  • 6 potatoes, big
  • 200 grams serrano ham, thinly sliced
  • olive oil
  • pieces of bread, to accompany the eggs
  • salt, to taste

  • The potatoes are washed, peeled and cut into strips. Season with salt and fry in a pan with a lot of olive oil. When they are golden, they are removed from the oil and dried with a paper towel.
  • In another frying pan with little oil, fry the fried eggs trying to make the yolk runny and the white barely cooked. They are removed and placed on the potatoes.
  • The eggs are mixed with the potatoes, the yolks being liquid will help to bring the dish together.
  • The dish is served (this is enough for 6 people) with the ham.
