The potatoes are washed, peeled and cut into strips. Season with salt and fry in a pan with a lot of olive oil. When they are golden, they are removed from the oil and dried with a paper towel.
In another frying pan with little oil, fry the fried eggs trying to make the yolk runny and the white barely cooked. They are removed and placed on the potatoes.
The eggs are mixed with the potatoes, the yolks being liquid will help to bring the dish together.
The dish is served (this is enough for 6 people) with the ham.
