Buckwheat Pancakes

  • 1 2/3 cups saracene pancake mix
  • 1 cup apple purée
  • 1 tablespoon canola oil
  • 3 tablespoons agave nectar, or natural sweetener
  • 3/4 cups rice milk, or soy milk
  • 8 tablespoons walnuts, chopped
  • 8 tablespoons flax seed, ground
  • 1 cup apple, cut into small pieces
  • 1/2 tablespoons cinnamon

  • Mix all the ingredients in a bowl.
  • Place 1/4 cup of the mixture on a griddle (pan) with a little canola oil.
  • Flip the pancakes when bubbles form in the batter and the edges start to dry. Enjoy immediately.
