Chicken and Corn Tostadas in Green Sauce

  • 1 bag cornstarch, frozen corn with butter sauce
  • 1 can beans, rinsed and drained pinto beans
  • 1 1/2 cups chicken breast , shredded roasted chicken
  • 1 cup green salsa
  • 1 tablespoon chipotle chile in adobo sauce, sauce
  • 10 tostadas
  • 3/4 cups cotija cheese , shredded
  • 2 tablespoons fresh cilantro, chopped

  • Cook the frozen corn as instructed on the bag; let it cool.
  • In a large bowl, mix the corn, beans, chicken, green sauce, and chipotle sauce.
  • With a spoon, place about 1/2 cup of the mixture on each tostada.
