Chicken Molletes with Chipotle

  • 1/2 cups bacon, finely chopped
  • 3 tablespoons onion, finely chopped
  • 1 teaspoon garlic, finely chopped
  • 2 cups chicken, in cubes
  • salt and pepper
  • 3/4 cups sour cream
  • 1/4 cups evaporated milk
  • 2 tablespoons ground chipotle chile
  • 1 tablespoon vegetable oil
  • 1 cup refried beans
  • 1 teaspoon cumin
  • 5 bolillo rolls
  • 3 tablespoons butter
  • 1 1/2 cups Manchego cheese, grated
  • 1 avocado, in slices
  • 1/4 red onions, sliced

  • Preheat the oven to 180°C.
  • For the filling, in a deep pan over medium heat, fry the bacon until crispy. Add the onion, garlic, and cook for 3 minutes. Add the chicken, season with salt and pepper, and cook until browned.
  • Add the cream, evaporated milk, and ground chipotle pepper and cook until thickened, adjust seasoning and set aside.
  • Heat the beans with oil in a pan over medium heat and season with cumin, salt, and pepper. Set aside.
  • Cut the bolillos in half, remove the crumb if desired, and spread a little butter. Heat in a pan or on a grill and toast the bread over medium heat until golden.
  • For assembly, spread a little beans on each bolillo, add the chicken, and sprinkle with Manchego cheese.
  • Arrange the molletes on a baking tray and bake for 10 minutes or until the cheese melts. Remove and serve with slices of avocado, red onion, and your preferred salsa.
