Chilaquiles Sandwich with Egg

This chilaquiles sandwich with egg recipe is characteristic of Mexico City and you can add protein, such as an egg or chicken or beef milanesa, for example. It is a hearty breakfast that will keep you going all day.

  • 1 teaspoon cilantro seeds, for the sauce
  • 1 teaspoon cumin, for the sauce

  • 1 cup cilantro, finely chopped, for the sauce

  • Boil water in a medium pot and add salt, cook the tomatoes with the onion, garlic, guajillo chili, and árbol chili for 5 minutes.
  • Blend the boiled vegetables along with coriander seed and cumin for 3 minutes, season with salt.
  • Heat vegetable oil in a pot over medium heat and fry the sauce for 5 minutes, add the cilantro and tortilla chips, let soak to soften.
  • Heat vegetable oil in a pan over medium heat and cook the Huevo San Juan® for 3 minutes, season with salt and pepper.
  • Open the telera, place a tablespoon of soft chilaquiles, cream, cheese, onion, cilantro, and finish with fried Huevo San Juan®.
