Chocolate Chip Pancakes

One of the best pancake recipes out there. The pancakes come out fluffy and the chocolate chips melt in your mouth, wow!

  • 1 1/4 cups flour
  • 3 tablespoons sugar
  • 2 teaspoons baking powder, royal
  • 1/4 teaspoons salt
  • 1 cup cow's milk
  • 2 eggs, separating the yolks from the whites
  • 7 tablespoons butter, 3 tablespoons melted, plus 4 tablespoons
  • 1/2 cups semi-dark chocolate chips
  • whipped creams
  • maple syrup

  • In a large bowl, mix the flour, sugar, baking powder, and salt.
  • In a small bowl, combine the milk, egg yolks, and 3 tablespoons of melted butter.
  • Add the milk and egg mixture to the flour, whisking until well combined and smooth.
  • In another small bowl, beat the egg whites with an electric mixer on medium-high speed until stiff peaks form.
  • Gently fold the beaten egg whites into the previous mixture.
  • Add the chocolate chips and stir gently.
  • Melt 2 tablespoons of butter in a hot skillet and use a large spoon to pour in 1/4 cup of the batter to make a pancake.
  • Let cook for 2-3 minutes (until bubbles appear) and then flip.
  • Repeat this process with the remaining batter and the rest of the butter.
