Classic Ranch Eggs

They are a must-have in the breakfast repertoire of any Mexican and those who are not as well.

  • 4 corn tortillas
  • 2 eggs
  • 1 tomato
  • 8 dried árbol chiles
  • 1 garlic
  • vegetable oil
  • coarse salt

  • In a hot skillet, add enough oil and briefly pass the chiles for just a few seconds so they don’t burn, remove and set aside.
  • In the same oil from the chiles, put the sliced tomatoes to fry well and then place them in the blender with the chiles, garlic, and salt to make a sauce.
  • Fry the tortillas one by one quickly just until they are soft.
  • In that skillet with more oil, add the eggs one by one and sprinkle with salt, let them become sunny-side up and remove.
  • On a plate, place 2 tortillas one on top of the other, then add plenty of árbol sauce and top with a sunny-side-up egg.
