In a deep bowl, mix the oats, cereals, coconut, and almonds.
In a small pot, mix the pineapple juice, apple juice, and sugar. Cook over medium heat until it starts to boil, then reduce the heat. Let it cook for 10 more minutes or until it reduces to just 3/4 cup. Remove from heat and add the honey.
Pour the juices over the oat mixture and mix well. Add the fruit and mix.
Prepare a baking tray with cooking spray and parchment paper. Pour the granola onto the tray and spread it out well with a spatula.
Bake for 40 minutes or until lightly golden. Remove from the oven and allow to cool before removing from the tray.
