Coconut and Honey Granola

This delicious homemade granola is made with oats, coconut, almonds, fruit juices, dried fruit, and honey. A delight.

  • 4 cups oats
  • 2 cups rice cereal
  • 1/4 cups grated sweet coconuts
  • 1/2 cups oat cereal
  • 1/4 cups almonds, lightly toasted flaked
  • 3 tablespoons brown sugar
  • 3/4 cups pineapple juice
  • 1/2 cups apple juice
  • 1/4 cups honey
  • 1/4 cups raisins, or dried blueberries

  • Preheat the oven to 150 degrees Celsius.
  • In a deep bowl, mix the oats, cereals, coconut, and almonds.
  • In a small pot, mix the pineapple juice, apple juice, and sugar. Cook over medium heat until it starts to boil, then reduce the heat. Let it cook for 10 more minutes or until it reduces to just 3/4 cup. Remove from heat and add the honey.
  • Pour the juices over the oat mixture and mix well. Add the fruit and mix.
  • Prepare a baking tray with cooking spray and parchment paper. Pour the granola onto the tray and spread it out well with a spatula.
  • Bake for 40 minutes or until lightly golden. Remove from the oven and allow to cool before removing from the tray.
