  • 6 scallions
  • 2 red bell peppers

  • 1/3 cups barbecue sauce
  • 6 ancho chiles, Toast the chili, remove the stem, and chop it.
  • 1 plantain , Cut it into 2-centimeter pieces

  • CHOP coarsely 3 onions and 1 red bell pepper. Put them in the blender with the water, barbecue sauce, and ancho chiles; blend until creamy; set this aside. Chop the remaining onion and bell pepper.
  • HEAT the oil in a large skillet. Add the banana, sausages, red bell pepper, and half of the remaining onion; cook for 5 min. or until the banana is golden. Stir in the beans and the barbecue sauce mixture; cook this for 3 min., stirring occasionally.
  • CRACK 1 egg and place it in a small bowl; slide it into the skillet. Repeat this with the remaining eggs, leaving space between them; cover the skillet. Cook over medium-low heat for 10 to 12 min. or until the whites are completely set and the yolks begin to thicken without being fully set. Top this with the remaining onion.
