In a bowl, place the flour, baking powder, and powdered sugar, and make a well in the center. Pour in the milk, butter, vanilla, and egg yolks, whisk and gradually incorporate the flour.
Preheat the waffle maker or griddle. Beat the egg whites until stiff peaks form in a bowl and fold them into the liquid batter with a metal spoon.
Preheat the oven to 250°F (250°C). Pour a small spoonful of batter onto the hot waffle iron (or the amount recommended by the manufacturer) and spread it to near the edges. Bake until golden brown.
Serve immediately with maple syrup, jam, whipped cream, or ice cream. Or keep them warm in the oven in a single layer until all are ready.
