Egg Flower

  • 4 slices wholemeal bread
  • 1 yellow bell pepper, orange
  • 4 eggs
  • salt and pepper
  • basil

  • Toast the bread slices in a pan, both sides.
  • Wash and cut the bell pepper into slices approximately 1.5 cm thick.
  • Spray oil in the pan and grill the bell pepper slices in the pan, both sides.
  • Crack the eggs into the bell pepper slices (with the pan well greased so they don't stick) and let simmer until the eggs are cooked to your liking.
  • Season the egg with salt and pepper to taste, and add basil to taste as well.
  • When the egg is cooked, place it on the bread, ready to eat.
