  • 1 tablespoon olive oil
  • 1 clove garlic, finely chopped
  • 1 cup button mushrooms, sliced
  • 1/2 cups oyster mushrooms, sliced
  • 2 portobello mushrooms, sliced
  • 1 zucchini, diced
  • 1 cup La Huerta® spinach
  • salt
  • pepper
  • 8 eggs
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • cooking spray
  • 1 avocado, in slices

  • In a medium skillet, heat the olive oil and cook the garlic and mushrooms until they release their juices. Add the zucchini and spinach, season with salt and pepper, and cook until the vegetables are done. Remove and set aside.
  • Beat the egg with salt, pepper, garlic powder, and onion powder.
  • In a non-stick skillet, spray a little cooking oil and cook some of the egg mixture over medium-low heat, forming a tortilla. Cook until well done and remove, repeat until you have four tortillas.
