  • 1 morita chile, hydrated and deseeded

  • For the sauce: Blend the tomato puree, morita chili, hydrated guajillo chili, chicken broth, onion, and garlic powder in a pot with the help of a blender, then turn on the heat and cook for 8 minutes over high heat.
  • Spray oil on a non-stick skillet and pour in the egg whites, season with salt and pepper, and carefully flip to cook on both sides.
  • Place the tortilla of egg white on a plate, fill with natural turkey breast and ricotta, then drizzle with the morita sauce.
