  • 1/4 cups deli ham, into small cubes

  • Cut the tortillas into medium squares and set aside.
  • Beat the egg with salt and pepper and set aside.
  • Fry the tortillas in a pan with oil until crispy. Add the onion, chili, and ham, and sauté for 3 minutes. Incorporate the beaten egg and cook for 3 more minutes or until well done.
  • Serve the egg with tortilla alongside beans and red sauce.
