Egg with Tortilla and Nopales

With these nopales, tortilla, and egg, you can have a very complete and nutritious breakfast.

  • 4 eggs
  • 1 package baby nopal, or cleaned baby ones
  • 4 corn tortillas, cut into not very long strips
  • 1 zucchini, long and large
  • 1 bell pepper
  • 1 teaspoon parsley
  • 1 teaspoon granulated chicken bouillon
  • 1/2 cups cow's milk
  • 200 grams Manchego cheese, in cubes
  • olive oil, enough quantity
  • salt, and pepper to taste

  • We place a skillet over heat, and when it’s hot, we add the olive oil, nopales, and tortillas, letting them fry.
  • When the tortilla strips are firm, we add the other vegetables and let them fry again; if the stew is a bit dry, we add more olive oil, let cook for 5 to 8 minutes, and stir.
  • In a bowl, we add the 4 eggs, milk, broth, salt, pepper, and parsley. We lightly beat and add this mixture to the skillet.
  • We stir the preparation; when the nopales stop releasing slime and the egg is cooked, we sprinkle cheese on top, cover, and let cook on low heat for 5 more minutes, then remove from the heat and let the stew rest covered.
