Crepes with Sunny-Side-Up Egg and Ham

This is a delicious breakfast recipe where you bake a sunny-side-up egg on top of a crepe with ham. If you prepare the crepes ahead of time, you can have this breakfast ready in just 15 minutes.

  • 1 1/2 cups cow's milk
  • 1 cup flour
  • 6 eggs
  • 1 tablespoon vegetable oil
  • 1/4 teaspoons salt
  • 4 slices deli ham
  • chives, chopped

  • In a blender, combine the milk, flour, 2 eggs, oil, and salt. Mix well.
  • Heat a medium round skillet with a few drops of oil (you can spread it around the skillet with a napkin to avoid greasiness).
  • Pour a little of the mixture into the skillet, ensuring it covers the entire skillet, and let it cook for about 45 seconds until golden brown on the bottom.
  • Repeat the same process with the remaining mixture.
  • Preheat the oven to 350ºF, or 180º Celsius.
  • On a baking sheet, place 4 crepes and put a slice of ham on top of each one. Carefully place an egg on top of each, and fold the edges of the crepes. Add salt and pepper.
  • Bake for 12 minutes until the egg white is cooked. Sprinkle with chopped green onions and serve.
