This is a delicious breakfast recipe where you bake a sunny-side-up egg on top of a crepe with ham. If you prepare the crepes ahead of time, you can have this breakfast ready in just 15 minutes.
In a blender, combine the milk, flour, 2 eggs, oil, and salt. Mix well.
Heat a medium round skillet with a few drops of oil (you can spread it around the skillet with a napkin to avoid greasiness).
Pour a little of the mixture into the skillet, ensuring it covers the entire skillet, and let it cook for about 45 seconds until golden brown on the bottom.
Repeat the same process with the remaining mixture.
Preheat the oven to 350ºF, or 180º Celsius.
On a baking sheet, place 4 crepes and put a slice of ham on top of each one. Carefully place an egg on top of each, and fold the edges of the crepes. Add salt and pepper.
Bake for 12 minutes until the egg white is cooked. Sprinkle with chopped green onions and serve.
