Prepare a quick guacamole in the blender by mixing: the pulp of the avocados, onion, cilantro, and a pinch of sea salt.
Put a little oil in a frying pan, when it's hot, crack an egg. If you wish, you can flip it or simply cook the yolk by drizzling a bit of hot oil on top.
Heat the Tortillinas® Tía Rosa® and place them on a platter. Spread the guacamole and place the sunny-side-up egg on top.
Season with salt and pepper to taste, serve.
