Sunny-Side-Up Egg on a Bed of Guacamole

  • 4 Tía Rosa® Tortillinas® precooked floured tortillas
  • 4 eggs  4 eggs
  • 2 avocados, ripe 2 avocados, ripe
  • 1/4 onions 1/4 onions
  • 1/4 lemons 1/4 lemons

  • Prepare a quick guacamole in the blender by mixing: the pulp of the avocados, onion, cilantro, and a pinch of sea salt.
  • Put a little oil in a frying pan, when it's hot, crack an egg. If you wish, you can flip it or simply cook the yolk by drizzling a bit of hot oil on top.
  • Heat the Tortillinas® Tía Rosa® and place them on a platter. Spread the guacamole and place the sunny-side-up egg on top.
  • Season with salt and pepper to taste, serve.
