This recipe is unique as everything is done in one skillet. Delicious sunny side up eggs with a rich combination of beans and chorizo on a base of corn tortillas. Besides having a great flavor, you'll only have to wash one skillet.
In an oven-safe skillet, fry the chorizo. Remove and reserve the fat in the same skillet.
With the chorizo fat, fry the corn tortillas until they are flexible. Roll them up and set aside.
In the other half of the skillet, sauté the beans and season. Lay two tortillas on one side of the skillet and place the beans on top to free up space.
Spread the remaining tortillas in the leftover space and distribute all the beans over the tortilla base.
Sprinkle the chorizo and, using a spoon, create four spaces. Crack the eggs into each space. Bake until the egg is cooked but the yolk is runny. Serve.
