Sunny Side Up Eggs with Beans and Chorizo

This recipe is unique as everything is done in one skillet. Delicious sunny side up eggs with a rich combination of beans and chorizo on a base of corn tortillas. Besides having a great flavor, you'll only have to wash one skillet.

  • 1 cup chorizo
  • 4 corn tortillas
  • 1 cup refried beans
  • 1 pinch salt
  • 1 pinch pepper
  • 4 eggs
  • 2 serrano chiles, in thin slices

  • Preheat the oven to 180° C.
  • In an oven-safe skillet, fry the chorizo. Remove and reserve the fat in the same skillet.
  • With the chorizo fat, fry the corn tortillas until they are flexible. Roll them up and set aside.
  • In the other half of the skillet, sauté the beans and season. Lay two tortillas on one side of the skillet and place the beans on top to free up space.
  • Spread the remaining tortillas in the leftover space and distribute all the beans over the tortilla base.
  • Sprinkle the chorizo and, using a spoon, create four spaces. Crack the eggs into each space. Bake until the egg is cooked but the yolk is runny. Serve.
