  • 1 tub San Juan® egg whites
  • 1/2 kilos tomatillo
  • 2 garlic
  • 1/2 cups fresh cilantro
  • 4 árbol chiles
  • vegetable oil
  • 2 cups chicken breast, Shredded
  • 100 grams Manchego cheese

  • Place the San Juan® Egg Whites in a bowl and beat them. Grease a mold and pour in a tablespoon of San Juan® Egg Whites. Put the dish in the microwave and cook for one minute. Carefully remove the egg white from the dish. Repeat this process with all the San Juan® Egg Whites.
  • Cook the tomatillo, onion, garlic cloves, and chilies in a pot with salt. Cook for ten minutes or until the vegetables are soft.
  • Grind the cooked vegetables (reserve the liquid). If you want a thinner consistency, add some of the vegetable cooking water.
  • In a pot, pour a little oil and add the sauce. Sauté for 10 minutes. Adjust salt and pepper to taste.
  • Make tacos with the shredded chicken, but instead of using tortillas, use the cooked egg whites. Place the tacos in a previously greased dish. Pour the sauce over them and sprinkle with manchego cheese.
  • Put the dish in the preheated oven at 180° Celsius for 10 minutes.
