Delicious Motuleños Eggs

If you want to prepare a complete breakfast, these Motuleños eggs are for you, as they contain the protein from the egg, peas, corn tortilla, ground black beans, diced turkey breast, and a delicious red sauce that will give your dish the perfect touch.

  • 3 tomatoes, cut into quarters
  • 1 clove garlic
  • 1/4 white onions, in pieces
  • 1 cup water
  • 1/4 cups vegetable oil
  • 1 cube Knorr Tomate® tomato bouillon
  • 1 cup peas, cooked
  • 6 corn tortillas
  • 6 eggs
  • 1 teaspoon Knorr® granulated chicken bouillon
  • 1 cup black beans, ground
  • 1 slice turkey breast, thick, in small cubes

  • For the sauce, blend the tomato, garlic, and onion with 1 cup of water. Strain.
  • Heat 1 teaspoon of oil and sauté the sauce until it turns an orange color, add the Knorr® Tomato cube and the peas.
  • Let it simmer on low heat for 2 or 3 minutes.
  • Heat a little more oil and quickly fry the tortillas to soften them. Drain.
  • In a non-stick skillet, heat the remaining oil and cook the fried eggs, one at a time. Season with pepper and a little Knorr® Suiza Chicken Bouillon.
  • On a plate, place a tortilla, spread refried beans on it, top with a fried egg, and drizzle with the tomato sauce and diced turkey breast. Serve.
