Preheat the oven to 90 °C.
In a small bowl, mix the cream with the chipotle pepper. The amount of chipotle is to your liking.
In two oven-safe containers, layer a corn tortilla, a slice of ham, refried beans (a thin layer), chipotle cream (to taste), and a slice of manchego cheese.
Once you have the layers prepared in each container, add an unbeaten egg, taking care not to break the yolk. Season the egg with salt and pepper. Place it in the oven until the white is cooked but the yolk is not.
Using a heart-shaped cookie cutter, cut two pieces of biscuit and four pieces of tuna. Season the tuna with salt and pepper.
